Cette technique constitue une alternative au test de temps de chute de Hagberg, offrant des r\u00e9sultats aussi fiables que ce dernier en se basant sur l&rsquo;activit\u00e9 enzymatique des amylases pr\u00e9sentes dans les grains. L&rsquo;avantage principal de Zymberg r\u00e9side dans sa capacit\u00e9 \u00e0 absorber un volume important d&rsquo;analyses quotidiennement. Cette analyse peut \u00eatre r\u00e9alis\u00e9e au sein du laboratoire Olc\u00e9a \u00e0 Chartres.
